Gibson
Overview
A Gibson is exactly the same as a Martini, only garnished with cocktail onions, which are pickled pearl onions, about the size of a marble. Along with the typical salty qualities, these also have a touch of sweetness, and the best them retain a little crunch. Basically they are cocktail garnish crack.
As you might imagine, a “Dirty Gibson” is a Gibson with the addition of the onion brine. Unlike Dirty Martini’s, which aren’t really my thing, I’ll go for a Dirty Gibson any day. In fact I actually prefer them that way. The gives has an appealing brightness that reminds me of white balsamic vinegar (yum!). Also, like a traditional Martini, a Gibson can be made with you choice of gin or vodka. I personally recommend gin.
Recipe

2½ oz gin or vodka

¾ oz dry vermouth

teaspoon onion brine - optional
Combine all ingredients in a chilled mixing glass. Fill with ice, stir for 18-25 seconds, strain into a chilled coupe or martini glass. Garnish with cocktail onions.
