New Recipe Page: The Tom Collins
It's full on Spring (finally), which means it is full on collins and fizz season, aka cocktails with soda water. The patriarch of this category is undoubtedly the Tom Collins. A cocktail so ubiquitous they named a glass after it. While it's about as simple as cocktails get, making one that truly sings takes a little forethought. Fortunately, I've thought about it plenty and have made dozens of versions over the years, so I feel confident that the recipe, and more importantly the technique, I have listed makes as good a collins as good as they come. Also on the new page are several variations including the Gin Fizz (is it the same thing?), the John and Colonel Collins, the South and East Side Fizzes and personal creations featuring celery & basil and raspberry & grapefruit. Plus history!
